Snickers Cupcakes w/ Caramel Frosting #SNICKERSminis

Football, football, football! As you may have read in a recent post my husband is all about football and when his friends are over I can sometimes go a little crazy trying to keep their stomachs full.

Of course every guy (and girl) has a sweet tooth so after some Sweet Chili Cheese Dogs I let the guys dig into some chocolate SNICKERS Cupcakes!

I recently saw that SNICKERS made NFL inspired #SNICKERSminis bagged candy so I went to Walmart to go searching and then I came home to begin the baking.

Combine Devil’s Food cake mix, chocolate pudding, sour cream, water, oil, vanilla, and 4 eggs in a blender. It will look like a ton of liquid but in the end you will end up with a ton of delicious thick batter.

Freeze these tasty little treats for about 15 minutes. Once your batter is mixed and your SNICKERS are frozen push one mini into the center of each cupcake.

Bake for 20 minutes and let cool. Mix your caramel frosting ingredients together. Frost each cake then drizzle caramel on top and top with a few chopped SNICKERS. For step by step cooking pictures check out my Google+ Story.

Snickers Cupcakes with Caramel Frosting

Ingredients
  • FOR THE CAKE:
  • 1 (18.25 ounce) package devil’s food cake mix
  • 1 (5.9 ounce) package instant chocolate pudding mix
  • 1 cup sour cream
  • 1 cup vegetable oil
  • 4 eggs; lightly beaten
  • ½ cup warm water
  • 1 teaspoon of vanilla
  • 24-30 frozen Snickers Miniatures
  • FOR THE FROSTING:
  • 1 stick unsalted butter, at room temperature
  • ½ cup shortening
  • 1½ lbs. confectioners’ sugar
  • 1 tbsp. vanilla extract
  • ⅓ cup caramel sauce (not syrup. It’s too thin)
  • *optional* heavy cream or milk
  • Chopped Snickers for garnish

Instructions
  1. FOR THE CAKE:
  2. Preheat oven to 350 degrees F.
  3. Line (2) 12 cup muffin tins with paper liners.
  4. In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs, vanilla and water.
  5. Evenly divide the batter amongst the prepared pans.
  6. Gently push a frozen Snickers Miniature bar into the center of the batter and smooth the surface making sure to cover the candy bar with batter.
  7. Bake for 18-22 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean.
  8. Cool cupcakes thoroughly on wire rack.
  9. FOR THE FROSTING:
  10. Add the butter, shortening, and vanilla to the bowl of an electric mixer. Beat on medium-high speed 1 minute until smooth.
  11. Blend in the confectioners’ sugar until smooth, 1-2 minutes.
  12. Mix in the caramel sauce until incorporated.
  13. If the frosting is too thick you can add little bit of heavy whipping cream or milk until it reaches the consistency you want it at.
  14. Frost cupcakes, drizzle caramel over the frosting, and garnish with a few chopped Snickers.
