Rainbow Cupcakes
I originally posted this recipe last July but my daughter and I had so much fun making them again that I decided to redo the post for those you didn’t see it!
Coolest cupcakes you could ever make? Rainbow Cupcakes without question. The vibrant and fun colors just scream “BITE INTO ME!” and you’ll be one happy camper when you do.
Although they look complicated, the cupcakes are actually really easy to make and just need 6 bowls, food coloring and cake mix. First, you need to mix up the batter for plain white cupcakes.
Divide it evenly into 6 small bowls, then add a generous amount of food coloring to each one to create the batters for the red, orange, yellow, green, blue, and purple layers. I love vibrant colors so don’t be afraid to add coloring if you think it’s too dull. The brighter the better in my opinion.
Begin spooning in equal amounts of batter into cupcake tins. I start with purple on bottom since red looks better on top.
Unlike me I advise that you don’t go crazy and overfill. Some of my cupcakes ended up to the brim and of course once they were baked they expanded big time.
Bake, cool, then frost. Or leave them un-frosted because honestly they are beautiful on their own.
Can you imagine the look on kid’s faces if this was on their plate? My girls LOVE these cupcakes even though they are just plain white cake.

That is cool! My son’s birthday is next month. As a teen, I think he’d like it if I did it in blue, green and maybe black. Don’t know how to make black though. Have to figure it out.

I think just combining all the colors would make black.
