Easy Peasy Lemon Squares (True-Lemon Review)

Recently I was sent a box of goodies from True Lemon. As you may know there are many health benefits to drinking lemon water. Putting a little lemon in your water is an easy way to restore the Ph balance in your body. But lemon in your water is also really tasty and refreshing!

However, David found that he was often frustrated with lemons: they are inconsistent in taste, messy to use, spoil easy, and inconvenient. And from a chef’s point of view, they are labor-intensive and David often wanted the taste of fresh lemons without adding unnecessary liquid.

David believed other people had to be equally frustrated with lemons and he believed he could do what no one else had done up to that point: find a way to duplicate authentic, fresh-squeezed lemon taste but in a crystallized, shelf-stable way that was convenient to use any time, anywhere. And, after a lot of hard work and long nights, David did just that.

True Citrus makes crystallized flavors for cooking, baking, and seasoning! Once I received my box I just knew what I wanted to do!

Just like the name says these lemon squares are super easy thanks to two special ingredients – cookie dough and True Lemon Cooking packets!

Start by heating your oven to 350*.

Flour your fingers then press the cookie dough to the bottom of your baking dish. Bake it for about 15-20 minutes. While it is baking beat your eggs, sugar, butter, and flour. Once combined add about 6-8 True Lemon Cooking packets. I started with 6 but then added 2 more once I took a little taste.

Your cookie dough crust should be about done by now. Add the lemon mix to the hot dough then bake it all for another 20-30 minutes until edges are light golden brown. Cool completely, about 30 minutes. Sprinkle with powdered sugar!

Ingredients
  • 1 roll (16.5 oz) refrigerated sugar cookies
  • 4 eggs, slightly beaten
  • 1½ cups granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter or margarine, softened
  • 6-8 packets True Lemon
  • 1 to 2 tablespoons powdered sugar

Instructions
  1. Heat oven to 350°F. In ungreased 8×9-inch pan, break up cookie dough.
  2. With floured fingers, press dough evenly in bottom of pan to form crust. Bake 15 to 20 minutes or until light golden brown.
  3. In large bowl, beat eggs with wire whisk or fork until well blended.
  4. Beat in granulated sugar, flour and butter until well blended.
  5. Stir in 6-8 packets of True Lemon. Pour mixture over warm crust.
  6. Bake 20 to 30 minutes longer or until edges are light golden brown.
  7. Cool completely, about 1 hour. Sprinkle with powdered sugar.
  8. With knife dipped in hot water, cut into 5 rows by 5 rows.

The squares were a huge hit for the family and they had no idea I didn’t go through all the mess of lemon juice, and lemon peel. Using the True Lemon packets made this recipe so easy. I cannot wait to try out more recipes using True Lemon and the other flavors, I’m thinking Fiesta Chicken, a mix of lemon and lime seasoning!

I have only cooked with True Lemon but I have put the Raspberry Lemonade into my water and it is amazing! I’m not really a fan of 0 calorie, 0 sugar drink mixes but I couldn’t even tell the difference between the Raspberry Lemonade mix and other sugary drinks.

      I’m sure any of the True Citrus favors would work so you don’t even have to make then lemon, but maybe Orange Squares or Lime Squares!
